πŸ‹πŸ‹πŸ‹πŸ‹πŸ‹how to make lemon ricotta raviolis πŸ‹ πŸ‹ πŸ‹ πŸ‹ πŸ‹ (recipe below in captions)

ITS SUPER EASY AND IF YOU WANNA IMPRESS SOMEONE THIS IS THE RECIPE TO MAKE THEYLL THINK YOURE A PRO CHEF.

ingredients:
for the ricotta πŸ‹
β€’ Milk (at least 500 ml)
β€’ Lemon juice (at least a tablespoon or two) or any acid works fine.
β€’ salt?
β€’ strainer, preferably a mesh bag strainer (look up nut milk strainer, there’s hundreds of options out there)
🫢This recipe of 500 ml milk will make 1/3 - 1/2 a cup of ricotta🫢
Cook at least 500 ml of milk on LOW for a couple of minutes until there’s a thin layer of skin starting on top + milk should be steaming. Put lemon juice in the milk and stir, in 30 seconds all of the milk should separate, put through strainer and let cool down. There’s no measurements because YOU DONT NEED IT!! The more milk you use the more acid you need to add.

Fresh pasta:
There are multiple fresh pasta recipes online, this is my go to
- 3 eggs
- 2 cups of flours
- olive oil
Mix all of these ingredients together until it’s one consistent dough. Add more oil or flour if necessary (dry dough = more oil, wet sticky dough = more flour). Let sit for 1 hour.

Ricotta filling:
- lemon rinds
- truffle salt (regular salt is fine)
- nutmeg 
- Basil leaves, but any herb you like can go in. Ricotta is very flexible when it comes to flavors. I didn’t add but you can, add some mozzarella or Parmesan, change it to a 3 cheese ravioli, still very good.
Roll out your dough as thin as you can get without ripping the dough.
Use anything you can to cut out your ravioli shape, a mason lid jar works fine.
Put the filling in and dab the outer edge with water, then add another cut out piece of pasta on top and close πŸ‹πŸ’–
Cool for 3-4 minutes or until it’s floating (grab one from the water and try it, it’ll be hot but whatevs). πŸ’–πŸ‹πŸ’–πŸ‹πŸ’–πŸ‹πŸ‹πŸ‹πŸ’–πŸ‹πŸ’–πŸ‹πŸ’–πŸ‹πŸ’–πŸ‹πŸ’–πŸ‹πŸ’–πŸ‹πŸ’–πŸ‹πŸ’–
