Maybe this is weird but I’m going to share a recipe! I make these every year at Christmas because on Christmas Eve we don’t have dinner, we just have a bunch of appetizers😋 These are my version of jalapeño poppers, I’m not going to give any amounts bc it really is easy to throw together and tweak it to your own tastes! 

Ingredients:
- jalapeños 
- block of cream cheese (easier to work with if it’s at room temp)
- cheddar cheese, grated (I use extra old orange cheddar but use your favourite basic cheddar)
- garlic, minced (I use jarred) 
- salt
- bacon

1. Cut the tops off the jalapeños & cut them in half lengthwise. Remove the seeds & as much of the pith as you’d like (more pith left = more heat to the pepper).
2. Mix together the cream cheese, minced garlic, and salt (use whatever amounts feel right & depending on how many peppers you’re doing, go easy on the salt since you’ll be adding bacon later). Add in the grated cheddar cheese & mix well. It should be dominantly cream cheese but add as much cheddar as you want.
3. Use a knife to spread the cream cheese mixture into the halved jalapeños. Wrap the filled jalapeño halves in raw bacon (depending on the size of your jalapeños you may want to cut the bacon strips in half). Tip: start by tucking the strip under & around the cut off top of the half lengthwise, then start wrapping horizontally. This keeps the cheese from leaking out of the open top.
4. Cook at 350F-400F for ??? minutes. Lower temp will take longer to cook the bacon but will soften the pepper more, higher temp will be faster but the pepper will still have a bit of bite so it’s up to you! I usually start with 10 minutes and then just keep checking on them every 5 minutes or so until the bacon is cooked (I know I shouldn’t but I also take the batter out of the fire alarm in my kitchen while cooking them😬).
5. Let cool for ~3-5 minutes & then enjoy!😛

These are great for get togethers bc you can prep the jalapeños & put together the filling before hand and then just assemble & cook when you’re ready for them🥰
