I made pasta sauce from scratch! I roasted onion, garlic and bell peppers in olive oil and blended them w sun dried tomatoes,  bssil and tomato sauce base (+ spices) tobmake a beautiful sauce. I ate it over a lentil pasta with vegan parmesan cheese. It was actually really good. The pasta sauce especially. I love the lentil pasta. It has so much protein and great flavor. I also mixed vegan butter w garlic, vegan mozzarella and vegan parmesan to make a really delicious cheese dip for the bread, which I topped w fresh basil. This whole meal was delicious,  filling and all vegan. I switched a few weeks ago and I have felt so good since. I cheated w a slice of pizza and had indigestion for 2 days that woke me up early the first morning. I don't miss feeling like that. I like feeling light, healthy and energetic. I am going to stick with this. It's good for animals and good for my body.
