My baking and candy making is done for the day. I'll have to make another roll or two of peppermint patties but I still have plenty of filling left. I just didn't have time today to do it all. I am taking a plate of treats to a few people tomorrow,  quick and socially distanced. Just the people helping me on the pasture land house, and a few friends and neighbors. I had hoped to be done in time to deliver today but alas it didn't work out. I made 12 mini pineapple upside down cakes in my jumbo muffin tins, dozens and dozens of the yummy cookies I gave you the recipe for, peppermint bark and peppermint patties. I'll have leftovers for me, for sure. 🙂 My candy always comes out so ugly but it tastes so good. If you tried it you'd get over the ugly factor, I promise. 😅 Yes, I taste tested a whole pineapple upside down cake already. It was that good. Using fresh pineapple made a big difference and I make double pineapple cakes. It has it on top (once it's flipped) and finely chopped pineapple and juice in the batter too. I also use sour cream and extra eggs in the batter. It's unreal moist. I am going to be making that again soon. A whole tray of it for my piggy self. Lol, that's breakfast cake!
